NEW!!! Lactose-free premium Italian cheese This Parmigiano-like cheese is completely lactose-free and made with vegetable rennet, it has a minimum maturation of 9 months. This cheese is conceived in compliance with the vegetarian philosophy at a small dairy farm in Lombardy (just outside the Parmigiano-Reggiano production zone), from the production process to the finished product. Within a radius of a few kilometers, the entire production of this particular cheese takes place: from forage to packaging, passing through cheese making. This dairy owns their own cows, their own land and therefor can produce this cheese at so called "Kilometer Zero". The taste is light and delicate and it can be grated on many dishes, on oven dishes or just eaten in chunks as an aperitif. It may remind of a young Parmigiano Reggiano, but it has it's own different production method and character.
